Mexican Rice

I tried The Pioneer Women Mexican Rice recipe and loved it. I did have to make some changes to it because the recipe made way too much for us and it was a little too spicy for my kids. Here is the recipe that I tried and it came out great.

  • 2 Tbsp canola oil
  • 1/2 white onion chopped
  • 1 1/2 tsp minced garlic
  • 1 1/4 cup of rice
  • 1 can of mild Rotel diced tomatoes w/ green chilies
  • 3/4 can of diced tomatoes
  • 1tsp cumin
  • A dash of cayenne pepper
  • A dash of salt
  • 2cups of low sodium chicken broth

Sauté the oil, garlic, and onion for about 3 minutes. Add the rest of the ingredients, stir, and bring to a boil. Simmer on low for about 15-20 minutes or until the rice is done. You may need to add a little more broth so keep some close. It’s a great side dish with tacos and my kids love it!
