Lemon Whippersnaps

This week I have been on this lemon kick. I searched Pinterest and found this yummy recipe for Lemon Whippersnaps. I had absolutely no idea what a whippersnap was but the recipe looked pretty easy.

  • 1 box of Lemon cake mix
  • 2 cups of Cool Whip
  • 1 egg, lightly beaten
  • 1 Tbsp lemon zest
  • 1 Tbsp lemon juice
  • 1/2 cup of powered sugar

Preheat oven to 350F.

Combine and mix all ingredients. The dough is a very gooey consistency so make sure you have a towel on hand. You can use a cookie scoop(or your hands like I did) to scoop out the dough and roll it into the powered sugar until it is fully coated. Place the dough on a parchment-lined cookie sheet and bake for 10-12 minutes. Let them cool before eating.

I will say that the cookies are pretty gooey but they sure do taste good!!
